Great British Bake Off maids of honour recipe – How to make Paul Hollywood’s sweet cheese tarts – The Sun

THE Bake Off hopefuls are back in the gingham-covered tent and will be competing to be the best at Dairy Week.

For the technical challenge, the bakers will be attempting to create 12 Maids of Honour, but how can you make your own version at home?

What is the recipe for Maids of Honour?

Here's the recipe from Paul Hollywood's British Baking cookbook:

  1. Make the pastry dough using the cubed butter
  2. Add water
  3. Roll dough out
  4. Add the half of the frozen butter, roll and turn
  5. To make the curd cheese, pour the milk and mix in the vinegar and let the curd separate from the whey.
  6. Sieve the mixture and leave to drain
  7. Make the lemon curd
  8. Roll the pastry and cut 12 rounds
  9. Place lemon curd at the bottom of each pastry case
  10. Add the cheese curd with the remaining filling ingredients (eggs, sugar)
  11. Put back in the oven
  12. Create Tudor rose stencil

What are Maids of Honour on Bake Off?

This is a bake that involves individual dainty tarts filled with flavoured curd cheese.

Host Sandi tells contestants that this week it is “back to the Tudor times with a recipe Henry VIII kept under lock and key.”

Legend has it that the monarch saw some of the Queen’s Maids of honour eating the cakes and demanded to taste one.

After he loved the flavour, he said they had to be produced solely for him.

A tea room in Kew, Surrey, which dates back to the 18th century, is said to have been set up specifically to sell them.

What do the Bake Off contestants have to do for the technical challenge?

Bake Off judge Prue Leith has set tonight’s technical challenge and presenter Noel Fielding tells the contestants the full instructions.

He says they are to make “12 Maids of honour with a flaky, rough puff pastry case with one layer of lemon curd and a silky smooth well-risen cheese curd filling that’s topped with a Tudor rose.”

The contestants have two hours to complete the task.

What is the theme for episode four of Bake Off?

Tonight’s episode sees the remaining contestants show off their skills with Dairy Week.

Paul Hollywood and Prue Leith will once again be setting the bakers with three different challenges, with the first task being a decorative signature bake that involves a risky turn-out.

After that, the bakers will then move onto the famous technical challenge, which consists of a complex recipe that dates back to Henry VIII.

On the second day, bakers will take on the intricate showstopper task to make a treat that’s usually found at the centre of Indian weddings.
