A HOME cook has shared their "game changing" slow cooker recipe for tomato relish – and people are loving it.
With jarred goods running low in supermarkets thanks to coronavirus stockpilers, many are trying to recreate their favourites at home.
So this new recipe has taken the internet by storm – with the cook labelling it the "best ever" and hundreds rushing to recreate it at home.
Posting on the Slow Cooker Recipe and Tips Facebook page, the amateur cook revealed their simple method.
They explained: "Our cherry tomato tree is producing so much fruit we can't keep up. So I found the best ever tomato relish recipe and put it all in the slow cooker"
First, they diced the tomatoes and onions – salting them and leaving them overnight.
How to make tomato relish at home
Ingredients:
1 1⁄2kg ripe tomatoes
500g brown onions (peeled and chopped)
2 tablespoons salt
2 cups sugar
3 teaspoons curry powder
1⁄4 teaspoon chili powder
1 tablespoon dry mustard
2 cups malt vinegar
Method:
1. Dice tomatoes and onions and cover with salt overnight.
2. The next day, add all ingredients to slow cooker and cook on low for 6hrs or to taste.
3. Add cornflour close to end to thicken if you like. Let it cool then use a stick blender to blitz it.
At the end, they added some cornflour to thicken the sauce and left it to cool – before using a blender to blitz it.
The next morning, they added the ingredients to a slow cooker and let them to boil down for six hours.
Impressed Facebook users raved about the recipe and, if you don't have a slow cooker, apparently it works well on a hob too.
One person gushed: "I made this on to stovetop. It's absolutely brilliant."
While another praised:"I currently have three batches in my fridge overnight. Cooking it stovetop with exact recipe tomorrow."
