A leading nutritionist has shared her ‘game-changing’ hack to get the perfect creamy curry, and she said it all comes down to adding almond butter to your sauce.
Jessica Sepel, from Sydney, said adding a few tablespoons of almond butter to your coconut milk and tomato paste makes the curry ‘life-changing’ and ‘especially delicious’.
It also helps to reduce the spiciness of the dish and give it a tasty sweet flavour.
‘Here is the recipe to my almond butter curry,’ Jessica posted on Instagram. ‘It’s honestly the curry hack that will change your cooking life.’

To make the curry, Jessica said you’ll need to get your hands on some sweet potato, coconut milk, tomato paste, almond butter, coconut oil, olive oil, garlic, coriander and curry powder.
Jessica also uses chickpeas, vegetable stock and baby spinach, but said you can select your form of protein, as sometimes she makes the dish with chicken too.
‘This beautifully fragrant vegan curry is packed with plant protein from the chickpeas and almond butter,’ she said.
‘Plus, it features quality fats, wholefood carbohydrates, and is seasoned with spices and herbs for a nourishing, flavoursome dish.’

How to make almond butter chickpea and sweet potato curry
INGREDIENTS
Jessica shared the super simple recipe on Instagram (pictured)
One sweet potato, diced
One tablespoon extra Virgin olive oil
One 400ml (14.1oz) tin coconut milk
Two tablespoons tomato paste
Three tablespoons almond butter
Two teaspoons coconut oil
Two cloves garlic, minced
Half a bunch coriander, stalks finely chopped, leaves reserved
One tablespoon curry powder, Jessica likes curry madras
Half cup vegetable stock
One 400 gram tin chickpeas, rinsed and drained
Two cups baby spinach
METHOD
1. Preheat the oven to 180°C or 360°F. Line a baking tray with baking paper. Spread the sweet potato chunks across the baking tray and drizzle with extra virgin olive oil. Season with sea salt. Bake for 25-30 minutes or until golden and cooked through.
2. In a mixing bowl, whisk together the coconut milk, tomato paste and almond butter until smooth. Set aside.
2. Melt the coconut oil in a saucepan over a medium-high heat. Add the minced garlic and coriander stalks and sauté for two to three minutes. Add the curry powder and cook whilst stirring for an additional minute. Next add the coconut and almond butter mixture to the pan, along with the vegetable stock. Bring to a boil, then reduce the heat and simmer for five minutes.
4. Add in the chickpeas and baby spinach, and continue to cook until the spinach is wilted. Stir through the cooked sweet potato. Season to taste with sea salt and black pepper.
5. Serve with the brown rice, coriander leaves and chilli flakes, if using.
